Baking an Eggless Coffee Cake - No Fail Recipe

Hi Friends, today we are baking Eggless Coffee cake. Its an easy to follow recipe and requires only basic ingredients which will be easily available in your kitchen! So no trip to supermarket is required :). But yeah let me assure you that his homemade version of the classic coffee cake is a far better then the store bought versions you may be used to. This easy recipe makes a rich and delicious cake that is perfectly tender and moist.
This coffee cake will perfectly pairs with your morning hot coffee!

So lets start the baking!!


Ingredients Required: 

1.5 cup All purpose flour (you can replace it with Wheat flour for healthy version)
1 tsp baking soda (Meetha soda)
1/2 tsp salt
1 cup powdered sugar (any sugar) - Or 19 gm splenda for sugarfree cake
4 tbsp coffee powder ( replace it with chocolate powder for chocolate cake)
1 tsp vanilla extract (optional)
1 teaspoon vinegar
5 tbsp vegetable oil (do not replace with butter)
1 cup cold milk


Procedure for Homemade Coffee Cake:

Step 1: Sieve together the flour, salt, baking soda, coffee powder and powdered sugar.

Step 2: To this dry mix, add all the remaining wet ingredients.

Step 3: Gently mix everything together with a spatula.

Step 4: Bake in the center of a pre-heated oven at 180 c for 35 minutes.

**Don’t over-mix OR over-bake. This cake only needs about 30-35 minutes in the oven, or until a wooden skewer inserted into the centre comes out clean.


For Cake Decoration:

I baked this during the lockdown when the markets were not easily approachable and the cake decoration is required as I baked it for my 7th Anniversary :). So I used below easy and quick decoration method for the icing: (However the decoration is not mandatory, you can enjoy your coffee cake without even decorating it :) )

- Used Malmade Jam for inner layer icing (very less spread)
- Decorated the top of the cake with grated chocolate (I used lindt dark chocolate)
- Used sugar decoration for the toping - Will share the method in my last post as it required video procedure

Quick Tip:

  • If your cakes go wrong and often crack, you could be putting your them on the wrong shelf in your oven.
  • To avoid cakes cracking don’t bake them too high in the oven, If you do the crust forms too soon and cracks as the cake continues to rise.
