Eggless Mango Semolina Cake (Vegan)

Follow below recipe for super moist, perfectly soft and so light to eat mango cake.

You don't require hand blender or any other equipment for this recipe!! Which makes it more Easy and Quick.  So this summer feast your kids with healthy and tasty MANGO CAKE.


Prep Time : 10 mins
 Cook Time : 30 mins 

   Ingredients needed

   Fine Semolina/Fine rava -1 cup
   Mango Pulp - 1 cup (thick)
   White Sugar - 3/4 CUP
   Oil - 1/4 cup any flavorless oil
   Cardamom powder - 1/2 tsp
   Baking powder - 1 tsp
   Chopped nuts - 1/3 cup (optional)

Preparation 

-Keep all the ingredients ready. Make sure to use fine semolina (suji). If you don't get fine Semolina then ground to a fine texture (not powder).

-Powder sugar and keep it ready. Please note that If you prefer it too sweet, you may add 1 cup of sugar. It also depends on the sweetness of the mangoes. 

-Any chopped nutes (preferably Pistachios) 

-Grease and flour the baking tray or line the pan with parchment paper.

-You can use fresh or canned mango (preferably alphanso) pulp (I used fresh). Do not add water while pureeing the mangoes as the mango pulp should be thick and not watery.
 

Method 

Step 1: In a bowl, mix fine rava, powdered sugar, cardamom powder and baking powder well.

Step 2: Add oil to the above mixture and mix well.

Step 3: Add mango pulp and mix well.

Step 4: Let it rest for 15 minutes. Pour it in a greased tray and garnish with sliced pistachio (Optional).

Step 5: Bake in a preheated Oven or Microwave (convection mode) at 180 degree for 25-27 minutes. Please note that if it is baked for longer time, the cake wil become very hard. keep a clise watch after 20 minutes.

Step 5: Do a toothpick test, If a tooth pick comes out clean then remove immediately.

Step 6: Allow it too cool completely.
