Main Ingredients:
blueberries
cream cheese
For the base:
Britannia Marie biscuits -180 gms (or digestive biscuits)
Butter - 5 1/2 tbsps, melted
For cheese cake layer:
Cream cheese - 230 gram
Powdered sugar - ½ cup
Vanilla essence - ½ tsp
Fresh cream/ thick cream - ½ cup
White chocolate - 150 gram (chopped)
Gelatone - 2 tsp
Water - 2 tbsp
For the topping
Blueberry presevative syrup- 3 tbsp
Grated white chocolate - 2 tbsp (for garnishing-optional)
Method - Making the Base
Step 1: Crush the biscuits and mix butter in it.
Step 2: Spread the above mixture at the bottom of cheese cake mould.
Step 3: Refrigerate it till it becomes hard.
Method - Making the Cheese Layer
Step 1: Beat together cream cheese and powdered sugar till creamy. To this add vanilla essence and mix well.
Step 2: Microwave the fresh cream for about 45 seconds to 1 minute (till it just starts bubbling).
Remove it from the microwave, add the chopped white chocolate and combine slowly till the chocolate melts completely. Leave it to cool for about 4 - 5 minutes at room temperature.
Step 3: Add this to the cream cheese mixture and beat till well combined.
Step 4: Sprinkle the gelatone over 2 tbsp water and let it sit for a minute. Microwave it in the oven for 10 - 15 seconds. Remove it from the oven and stir it with a spoon. Let it cool for a minute. Once it is cool add it to the cream cheese mixture and combine well.
Step 5: Pour it over the biscuit base and spread evenly. Cool it in the refrigerator for about 3 - 4 hours to set.
Method - Making the Topping
Step 6: Remove the cheesecakes from the pan .
Step 7: Heat the blueberry syrup in a microwave. Let it cool. Pour it over a top cheese layer.
Step 8: Refrigerate it for some time and carefully remove the sides of cheesecake mould.. Serve cool
Some Tips:
-You can set the cheesecake in cups too.
-you can also use hung curd instead of cream cheese, in that case add 1/2 cup of freshly made crumbly paneer and blend to a smooth paste.
- if you are using agar agar in place of gelatone, double the quantity.
- To prepare gelatin, place the gelatin in a bowl with 1/4 cup cold water. Keep aside for a few minutes to allow it to bloom (the gelatin absorbs the water). Add 1/4 cup of warm water to it and place the bowl over very low flame and stir till the gelatin dissolves. It should not boil. Turn off heat and cool.
