When Life Gives your Lemon..Make Lemon Cake
Ingredients:
1 1/2 cups Maida/APF
3/4 Cup Powdered sugar (powder it in a mixer)
1 cup thick curd.
1/4 Cup Milk (optional)
1/2 Cup Oil
2 tsp lemon essence
1 tsp Orange zest
1 1/4 Tsp baking powder
1/2 Tsp Baking Soda
A pinch of salt
Make sure all the ingredients are at room temperature when you start.
Preheat the oven at 180 degrees.
Method:
1. Sift together flour, baking soda, baking powder and salt. Keep aside.
2. In a mixing bowl, beat the curd until smooth, add sugar and oil. Beat these 3 ingredients together for a minute. Now add orange zest and lemon essence. Mix.
3. Now add all the dry ingredients to the curd mixture and fold everything together. Mix gently but make sure no lumps are formed. You can use hand blender or a mixer grinder too to prepare the batter. Just make sure to beat the batter only for 30 seconds or so.
Once done, dust raisins with some flour and add to the batter and fold. Pour the batter in a greased baking tray and bake at 180 degrees for 35-40 minutes or till the toothpick comes out clean.
** The batter is going to be a little thick here. So incase you feel your batter is a dry, add milk (room temperature). Start with a tablespoon and you can use upto 1/4 cup.
